Ingredients

Avocado Oil

Onion
Chopped

garlic

Bell Pepper
Chopped, Use any color you like

Broccoli Florets

Cup
Kale
Chopped

Eggs
Salt and Pepper to Taste
Instructions
Heat 2 T avocado oil in a large skillet.
Add Onion, peppers, broccoli, salt and pepper and saute about five minutes or until onion and pepper show char.
Add garlic and saute another minute.
Add kale and let it wilt for about two minutes.
Add veggies to a large bowl and heat the remaining avocado oil in pan.
Crack eggs in oil and sprinkle with salt and pepper. Let cook for about a minute and then flip.
Cook another minute and then top veggies with eggs.
