Instructions
  1. Preheat oven to 450 degrees and line a large baking sheet with foil.
  2. Add all diced vegetables and apple into a large resealable plastic bag.
  3. Add in 2 Tbsp avocado oil, salt and pepper to taste and toss vegetables in bag.
  4. Pour vegetables onto prepared sheet.
  5. Combine all ingredients for seasoning mix and set aside 1 Tbsp.
  6. Pour remaining seasioning mix into a large, resealable plastic bag (you can reuse the one you used for the vegetables) and add chicken thighs.
  7. Shake the bag until the seasoning is distributed evenly among thighs.
  8. Wrap 1-2 slices of bacon around each thigh and add the thighs to the pan with the veggies.
  9. Sprinkle the veggies and chicken with remaining 1 Tbsp avocado oil and sprinkle with remaining 1 Tbsp seasoning mix.
  10. Cook for 40-45 minutes or until chicken is cooked through and vegetables are roasted.
