Instructions
Preheat oven to 450 degrees and line a large baking sheet with foil.
Add all diced vegetables and apple into a large resealable plastic bag.
Add in 2 Tbsp avocado oil, salt and pepper to taste and toss vegetables in bag.
Pour vegetables onto prepared sheet.
Combine all ingredients for seasoning mix and set aside 1 Tbsp.
Pour remaining seasioning mix into a large, resealable plastic bag (you can reuse the one you used for the vegetables) and add chicken thighs.
Shake the bag until the seasoning is distributed evenly among thighs.
Wrap 1-2 slices of bacon around each thigh and add the thighs to the pan with the veggies.
Sprinkle the veggies and chicken with remaining 1 Tbsp avocado oil and sprinkle with remaining 1 Tbsp seasoning mix.
Cook for 40-45 minutes or until chicken is cooked through and vegetables are roasted.
