  1. In a small saucepan, combine the coconut oil, sugar, cocoa powder and milk. Turn the heat to medium and let it come to a boil.
  2. Let that mixture boil together for 1 minute 30 seconds.
  3. After the boiling time remove the pan from the heat and add the peanut butter, vanilla and salt. Mix this all together until smooth.
  4. Add in the coconut and oats and combine.
  5. Using a cookie scoop, scoop balls onto parchment paper. Let the cookies set for 2 hours or until set.
  6. Store leftovers in an air tight glass container.
