(Use light or full-fat)

Green Apple
(Peeled, cored and chopped)

Peanuts
(Chopped)
Salt and Pepper to Taste
Instructions
Heat butter on medium heat in a large soup pot
Cube chicken and cook it in the butter for about five minutes, stirring occassionally
Add the onion and cook until soft
Add the garlic and cook for about one minute
Add the curry powder and stir to combine
Stir in the chicken broth and coconut milk and cook until hot, about five minutes
Peel, core and chop the apple. Add the apple to the soup and cook another five minutes
Top each serving with a tablespoon of the chopped peanuts.
